That’s the Spirit!

Craft-distilling has arrived in our nation’s capital: The Washington City Paper profiles New Columbia Distillers, which will soon be producing gin and rye whiskey (what? no peanut-butter-and-jelly flavored vodka?). It’s a most-welcome trend as cocktail enthusiasts like Derek Brown and Todd Thrasher work to restore a drinking culture lost because of Prohibition. And it’s not just happening here—other major cities are experiencing a craft-distilling resurgence. In Chicago, Koval Distillery, which also turns out a smooth rye whiskey, is the first boutique distiller to open in the Windy City since Prohibition. According to the City Paper, the District underwent an even longer drought prior to the opening of New Columbia Distillers (whose website is coming soon). One of the owners, Michael Lowe, was an attorney—I’m guessing he finds distilling more satisfying than litigating.
