Steaked Out

Washington Post restaurant critic Tom Sietsema is all about steak in the current Post magazine. Problem is, he still hasn’t found the perfect steakhouse in D.C. He loves the old-school nature of the Prime Rib, but not its New York strip. He enjoyed the crabcake at J&G, but makes no mention of beef. He did love the steak at Bourbon Steak—I didn’t (I like mine to look charred on the outside). And he was totally dismissive of Morton’s and the Capital Grille and makes no mention whatsoever of Smith & Wollensky.

In other steak news, there’s a newly fashioned cut called the Vegas Strip, which I noted over at weeklystandard.com. (It is, in fact, a shoulder cut.)
