Poached Eggs

There’s no excuse not to know how to poach an egg, though a lot of us don’t—perhaps it’s the thought that the process is time-consuming or too involved? It’s really not. So if you find yourself in that category of loving poached eggs but never doing them yourself, enjoy this short video below from the Washington Post, in which Michel Richard demonstrates three ways to poach. Yes, he makes anything look easy: I chatted with him once while he peeled a potato—he looked at me the entire time and when he finished, he was left with a spotless potato and one spiraled peel. But seriously, poaching is easy and fun—Mark Bittman recommends adding a little white vinegar to the boiling water, but it’s not necessary.
