Kitchen Confidence

It took a while for Danyele McPherson to get used to all those cameras in her face on Top Chef. She’s a shy type of chef who prefers working in the back of the house—and you never saw her mix it up with, say, John Tesar. But by the time she loosened up, the Dallas chef got sent packing for a chicken terrine with blueberry mostarda (a terrine is hard enough—but blueberry mustard?).

Meanwhile, the Top Chef cruise sets sail next spring. C.J. Jacobson advances yet again thanks to his version of a Banh Mi. (And yes, Banh Mi is the next big thing. It’s like Pad Thai. Or ramps.) You can find the rest of my take at weeklystandard.com.
